While the economic uncertainty of the COVID-19 pandemic is a concern for some, one Kamloops business owner sees it as a unique opportunity.
Katie Yun has owned GUI Korean BBQ in Aberdeen for over three years. Now she will be opening her second restaurant, Blue Fish Sushi, on the North Shore.
As health restrictions have eased, Yun has noticed more people going out for food, which was impossible during the pandemic.
As regularly eating out and trying new restaurants was impossible during the early stages of the pandemic, now that restrictions have eased Yun has noticed an increase in demand.

"I’m so glad people (have) started going out to enjoy food," she said. "So I think it’s good to try a new business."
Yun has experience owning Japanese restaurants in the U.S., and has an accomplished sushi chef ready to make unique creations for Blue Fish.
Her priority going into her new business is making good food people will be talking about all over town.
"I believe people will come if we serve very nice food," she said. "If they like it, they will come back."

In anticipation for their opening next week, Blue Fish has released their full menu to its Facebook page.
Along with classic Japanese sushi and appetizers, they have thrown in some unique dishes customers may not have seen before.
One appetizer, Monkey Brain, is deep fried avocado with crabmeat and spicy tuna inside.
They also have a Sashimi Roll, which is sashimi (raw fish) wrapped in a thin slice of cucumber.
Yun is excited about the location of Blue Fish, as she sees it as an up-and-coming area.
"The area we are located in is developing right now, so it attracted me to (open) a new restaurant," she said.
Blue Fish is at #3 685 Tranquille Road beside the North Shore library branch.
While an exact opening date has not been set, Yun is planning to open sometime next week, as long as all her permits go through in time.
