RECIPE: Blueberry Lime Scones

I can’t wait for blueberry season to begin. Like all local, seasonal fruits, veggies and berries, fresh is best. However, one of the starring attributes of blueberries is that they freeze incredibly well, so do make sure to stock up for the year.If you have the chance to visit a u-pick blueberry farm- do it!

I love the zip of lime flavour in these delicious scones. They are amazing right out of the oven, but a day or two later try them in a panini press.

Blueberry Lime Scones

Ingredients:

2 cups flour
1/3 cup sugar
4 tsp baking powder
pinch salt
fine zest of two limes
1/2 cup very cold butter, cubed
2 tbsp lime juice
1 tsp vanilla extract
1 cup buttermilk
1 1/2 cups blueberries

In a food processor, combine the flour, sugar, baking powder, lime zest and salt.
Add the cold butter a few at a time and pulse to form a coarse meal.
Toss in the blueberries.
In another bowl, mix together the buttermilk, lime juice and vanilla extract.
Add to the dry mixture and mix together until just combined and forms a dough ball.
Drop by heaping tablespoons onto a parchment lined baking pan.
Bake at 375 degrees F for 20 minutes or until light golden brown. Enjoy!
