Inflation eating away your budget? Try these recipes to keep you on track
With rising costs due to inflation, residents are saying their food budgets are tighter this year.
These family-style recipes can be made cheap and easy and are a perfect way to save on food costs. Made with many ingredients that can be found in your local pantry and can be even made vegetarian further saving you on the food costs.
Normally made with chicken thighs, this dish can also be made vegetarian. Just swap out the chicken for two roasted poblano chili peppers, leave out the pork belly and chorizo, use vegetable stock instead of chicken stock, and add 2 Tbsp julienned sun-dried tomatoes along with the garlic.

This classic braised chicken and tomato dish originates in Tuscany. Cacciatore actually translates to "hunter" in Italian and "alla cacciatora" refers to a meal prepared "hunter-style" with onions, mushrooms, tomatoes, bell peppers, and sometimes wine. This dish was so popular that it even has its own day of celebration.
You can substitute the polenta with many things, such as couscous, semolina, and cornflour.

Singletree Winery's Turkey & Eggplant Moussaka
This delicious dish combines eggplant with a homemade turkey meat sauce and was created by Debbie Etsell, owner of Singletree Winery.
It takes roughly an hour to make. You can add lemon juice to the recipe instead of white wine for that needed acidity and cottage cheese instead of ricotta cheese and any swiss cheeses for gruyere.
These puddings are the perfect side dish and only contain four ingredients. Make it fancy with different sides or keep it simple.
This cool dish will also keep your home cool as no oven operation is required. All you need is watermelon, feta, mint and some balsamic vinegar to enjoy this tasty dish.
