Refreshing is the theme we are all looking for during these dog days of summer and watermelon in any form is a perfect choice.

I love to make watermelon Greek Salad when I have seasonal sweet tomatoes in hand as the combination of salty feta with the sweet watermelon is a sublime pairing. A fun spin on these flavours that makes for wonderful finger food or picnic fare is to thread the watermelon and feta onto skewers. Throw in a mint leaf or a basil leaf with a drizzle of balsamic and you have a winning combo that is pretty, too. This is a lovely addition to brunch as well.

Watermelon Feta Skewers

You can make as many of these tasty skewers as you want. Cut 2 cubes of watermelon and 1 of feta for each.

Watermelon cubed into 1 - 1.5-inch pieces
Feta cubed into 1-inch pieces (make sure you purchase a container with a solid feta piece to cut)
Whole mint leaves
Balsamic vinegar reduction (I like buying Nonna Pia’s brand made locally in Whistler)
Bamboo skewers

Thread a piece of watermelon onto a skewer, followed by a mint leaf, another watermelon cube, and then a cube of feta. Repeat. Store in the fridge until serving time to keep cold. Drizzle with reduction and serve.
