Delta Hotels by Marriott Kamloops announces new restaurant

KAMLOOPS - The transformation of Hotel 540 in downtown Kamloops into a Delta Hotels by Marriott franchise continues with the addition of a new restaurant.

Hotel 540 announced in January 2018 that it would be becoming a Marriott franchise, and according to a media release from the company, the Cordo Resto + Bar is set to open this spring.

The restaurant will seat 90 and have windows overlooking Victoria Street, as well as a 25-seat wine bar complete with onsite mixologists, Delta Kamloops says. There will also be a grab-and-go nook serving Starbucks coffee, breakfast and lunch offerings, and a private dining room that can seat up to 25 guests.

Some of the other design elements include a fireplace surrounded by natural rock, large light-emitting windows, black-framed French doors and a 70-inch flat screen TV for displaying presentations, photos and videos.

Guests can expect to see the use of custom-milled woods, natural leathers and black metal accents throughout the restaurant along with the inclusion of unique art pieces that celebrate the surrounding region, the hotel says.

The cuisine is expected to include fresh herbs, local produce, regional wines and house-made bitters and infused syrups for cocktails.

"The elements of Cordo will appeal to the savvy business traveler, couples and families on the go and those looking to enjoy a delectable, locally-inspired meal set within a relaxed and inviting, yet intimately sophisticated atmosphere," the hotel's general manager Bryan Pilbeam says in the release.

The name Cordo comes from the word Cordillera which the hotel says are parallel mountain ranges together with intervening plateaus, alpine tundra, dry sagebrush, dense conifer forests and interior plains.

“We felt the meaning of Cordo spoke to the unique natural elements that surround our city and provided a platform in which to showcase the bounty of our region through our fresh, culinary and cocktail creations," Carla Donnelly with Delta Kamloops says in the release.
