Pascal Roy, co-owner of the uber-charming Le Marché St. George café and grocery in Vancouver, opened his natural wine bar La Fabrique St. George in the trendy Mt. Pleasant neighbourhood last summer. The concept was born from Pascal’s love affair with the ancient winemaking process he discovered in the Caucasus region of Georgia.

The wines are made in Georgian amphoras, called qvevr. It is in fact, the oldest method of making wine in the world and what the winemakers call seriously hands-off winemaking. This is a wine for the purist and as au natural as you could wish for. The urban winery is making two whites, a red, two bubblies, a rosé and an amber as well as a cider.

La Fabrique St. George is a winery, lounge and also a mini gourmet market. Currently the patio is open if you want to stay but the wine shop and market are takeaway. The market carries an array of mostly local with some delicious international picnic staples available to pair with your wine. From cheese, bread and paté to gourmet chips and olives, they’ve got the best goods.

Open from 11 a.m. - 10 p.m. Tuesday through Sunday with wines by the glass, coffees and build your own picnic board.

33% Gewürztraminer, 34% Pinot Gris, 15% Muscat, 8% Riesling
Skin contact white, a little hazy, a tiny touch of effervescence. Notes of orange, guava, vanilla, lime zest. Wild ferment & unfiltered.
