Plant-based pop-up take-out joint coming to Kamloops

Although she isn't vegan herself, Kaity Lou Clement wants fellow omnivores to know that plant-based food can be delicious.

Kamloops residents will be able to judge this for themselves at Sprouted Soul, a one-night pop-up restaurant Clement is launching July 4. 

"I feel like there’s a lot of limited options especially right now with a lot of places closed," she said. "I want to be able to make really delicious plant based food that everyone loves."

The Thompson Rivers University alumni has 10 years of professional cooking experience and is currently a chef at Terra in Kamloops. Clement is also a relief instructor at her alma mater, teaching new students how to be creative in the kitchen and get a job in the industry.

It's this creativity that she will be bringing to Sprouted Soul, which will operate out of a restaurant kitchen downtown. While she wants to keep the menu and location under wraps for awhile longer, she said customers can expect unique food they may not have seen before.

"Definitely expect some really awesome sandwiches and maybe some things that you wouldn’t expect someone who is plant-based to be able to get," she said.

"Something like a steak melt, but not a steak melt, or like a fried chicken sandwich," she said.

Instead of using pre-packaged processed meat alternatives, Clement will be making everything from scratch. 

The day before the launch, Sprouted Soul's menu and location will be released on social media. Customers can place their order online and schedule a pick-up time. The restaurant is take-out only to promote safe social distancing.

Above all, Clement hopes that everyone can enjoy her food with an open mind. 

"I think people need to not always compare it to their meat counterparts. Think 'is this delicious? am I enjoying this?' Not 'is this a burger?'" she said.

"Just appreciate what it is, rather than always having this comparison."
