Some residents are eagerly awaiting the opening of a new bistro in Kamloops.

Owner Eduardo Steiger has been busy setting up Eddie’s European Bistro for several months, and the doors are due to open next month.

Steiger is also the owner at Rivercity Countertops in Valleyview. The new restaurant is located right next door at 2345 East Trans Canada Highway.

Originally from Germany, Steiger is excited to bring European cuisine to the neighbourhood, offering a varied menu of specialty pizzas, donairs, soups and calzones. He wants to provide fast, healthy and fresh meal options for working families.

“The inside is almost done and some staff are hired,” Steiger said. “I’m just waiting for a health and safety inspection.”

The bistro area is small, clean and bright. It is not a sit-down venue, rather a take-away restaurant.

“Everything will be made fresh every morning,” he said. “There are a lot of varieties for people to choose from so they won’t get tired of the menu.”

Steiger said he is sourcing food locally so is not worried about supply issues. Running the full-time countertop business while starting up a second business has been challenging, but Steiger said he hasn’t had many hiccups along the way.

“I want working people to have access to fresh, delicious European cuisine they can pick up on the way to and from work," he said.
