RECIPE: Fresh cherry slice

It is cherry season now and the fruit stands and farmers' markets will be offering baskets of these beautiful red orbs.

One of the great gifts of living in such a bountiful region is being able to shake the hand of the farmer that grows your food. Do take time and do that and shop local markets, whenever possible.
This is a favorite cherry recipe passed down from the many tree fruit farmers in my family. After your initial pig out on fresh cherries, try this delightful dessert.

Fresh Cherry Slice

½ cup cold butter, cut into cubes
1 cup flour
2 Tbsp icing sugar

Filling:
2 eggs

½ tsp vanilla

¼ tsp salt
1 cup brown sugar
1/3 cup flour
1/2 tsp baking powder
1 ½ cups fresh local cherries, pitted and quartered
1 cup local walnuts, chopped

Heat oven to 350 degrees.

Make crust:
In a bowl mix flour mixed with icing sugar and then cut in cold butter.  Press into 9x9 pan and bake at 350 degrees for 5 minutes. Set aside.

Make filling:
In a large bowl combine eggs, vanilla, salt brown sugar, flour and baking powder. Stir in cherries and walnuts.
Spread mixture atop crust and bake at 350 degrees for 45 minutes.

Cool and slice. Serve alone or with vanilla ice cream.

*Tip: to double recipe use 9x13 pan
