Three Top Chefs (See below) Two Nights (February 14th or 15th) One Amazing Dinner THE CHEFS: Chef Brock Bowes: After graduating from the Vancouver Island University Culinary Arts program, Bowes worked under the highly regarded Chef Bernard Casavant at Fairmont Chateau Whistler and then at Chef Bernard’s own Café. He returned to Vancouver Island to work at the Hotel Grand Pacific, the Victoria Marriott Inner Harbour and Dock 503. After travelling to Europe to further expand his culinary horizons, he returned to work with Casavant at Burrowing Owl, then travelling as a culinary two-some to Manteo Resort. With Vancouver Island again calling, he returned with a stop at Pacific Restaurant before becoming the opening Executive Chef at the Oak Bay Beach Hotel before finding his way back to the Okanagan in 2013 to Burrowing Owl. In addition to being a highly creative, detail oriented chef with a strong work ethic and passion for the culinary arts, Bowes has demonstrated his commitment to supporting local farmers and artisans as well as developing young talent in the kitchen. He worked closely with farmers in the Okanagan and is active in the community at various events including FarmFolk CityFolk’s Okanagan Feast of Fields and Chefs in the Classroom – edible education. In 2015, Chef Bowes won Chopped Canada with a killer lobster dish taking home $10,000. Chef Bowes also represented RauDZ Creative Concepts and the Okanagan Valley in the 2016 Canadian Culinary Championships Gold Medal Plates in Victoria, BC with an amazing dish of sous vide octopus paired with wine from West Kelowna’s The Hatch winery. Instagram - @projectbe _________________________________________________________ Chef Michael Buffett Michael is the president of the Start Fresh Project Society and owner of the Start Fresh Kitchen, a social enterprise cooking school and catering company that creates awareness and provides support for people with barriers to employment. Chef Michael was recently chosen for the Kelowna Chamber of Commerce “Top 40 under 40”, won ChangeUP 2018, was a finalist for "Top Foodies in Western Canada" and the team at Start Fresh won "Rising Star Business of the Year" Instagram @chefosaurus _________________________________________________________ Victor Laderoute (Pastry and Gelato Master) Victor gets his love of dessert from his Mom and grandmothers. Fond memories of sitting in his Grandmother’s kitchen on a large sofa watching as she prepared shortbread and lemon sponge for large family gatherings – “what I remember most, are the large bins of raw ingredients such as sugar, flour and other baking ingredients… I don’t recall anything coming out of a jar or can and if it did come out of a jar it was a preserve brought up from cold storage which she had canned from the summer’s bounty.” It was these first impressions that are everlasting in Victor’s memory. Today, Victor is the Gelato Master at QB Gelato where he and his team take great pride in making everything from scratch – just like his Grandmother did! From toppings or chunky additions you see in the gelato, to the pastries, salted caramel sauce and pretty much everything else in-between… all made in QB’s kitchen.
